How to Choose a Trompo / Shawarma Cart: The Complete Vendor Guide

5 Things to Look for When Choosing a Trompo

1. Burner Output (BTUs)

More BTUs = faster, more even cooking. For a busy street cart or market stall, look for at least 15,000–20,000 BTU. A low-output burner will leave you with raw centers and burnt edges during a rush.

2. Spit Capacity (kg/lbs)

How much meat do you stack per service? A weekend market vendor might need 20–30 lbs of capacity. A daily taquería operation may need 40+ lbs. Match the spit size to your volume — not your wishlist.

3. Build Material

Commercial-grade stainless steel is non-negotiable. It handles grease, heat, and daily cleaning without warping or rusting. Avoid thin-gauge units that dent easily or have painted surfaces near the flame.
